Happy Friday! We made it through another week of “shelter in place”! All I have been doing is studying, baking, and watching anime. Which is what I have been doing before the Covid-19 pandemic. Like most individuals, the quarantine affected me since I can’t travel as much as I would like. So…..more baking it is!
I tried making chocolate rice flour pound cake and it was successful. It tasted moist and delicious. I posted the recipe below, so I hope that you like it. Have fun baking!
Chocolate Rice Flour Pound Cake
- 1/4 cup vegetable oil room temperature
- 1 egg
- 1/3 cup milk
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup rice flour sifted
- 2 Tbsp cocoa powder
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- Bake at 350 F. for 30-40 minutes in a 8 x 3 loaf pan.
- Let it cool completely before cutting and decorating it.
