Taro cupcakes are quite easy to make. Taro is a root vegetable, and it has a similar texture as ube (purple sweet potato). The first time I made taro cupcakes, it was a disaster. I used raw taro, and the cupcakes tasted terrible. The second time I made the cupcakes, I steamed the taro and then mashed it. The cupcakes were delicious, and I shared them with other people. If you havenโ€™t tried taro cupcakes or taro cake before, you should give this recipe a try. It is quite a unique taste.

Taro Cupcakes Recipe

Servings: 9 cupcakes

Ingredients

  • 1 egg
  • 1/4 cup granulated sugar
  • 1/8 cup vegetable oil
  • 1/4 cup taro cooked
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2/3 cup almond flour
  • 1/2 tsp salt

Instructions

  • Mix all of the wet ingredients together. Then, add the dry ingredients and combine well.

  • Bake at 350 F. for 17-20 minutes, or 12-13 minutes in a Babycakes cupcake maker.
